Roast Chicken with Fenugreek Leaves

This is an unique Roasted Chicken dish. It’s easy to make and is healthy. A delicious accompaniment with some steamed rice or roti.

Ingredients

  • 6 Chicken Drumsticks (.)
  • 1 Onion (Chopped.)
  • 2 cloves Garlic (Chopped.)
  • handful Curry Leaves (.)
  • 1 Poteto (.)
  • 1 Tomato (Sliced.)
  • bunch Fenugreel Leaves (.)
  • 2 to 4 Green Chillies (.)
  • 1 teaspoon Soya Sauce (.)
  • 1 teaspoon Oyster Sauce (.)
  • 2 teaspoons Tomato Sauce (.)
  • 1 teaspoon Raw Curry Powder (.)
  • 2 teaspoons Lymol (.)
  • Salt and Pepper (to Taste.)
  • 100ml Water (.)

Directions

Step 1
In a bowl, season the chicken with raw curry powder, chili pieces and soya sauce, salt, pepper and keep aside.
Step 2
Heat the pan, add the chicken drumstick in to it, and seal both sides. Then place them on a baking tray and bake in the oven for 15 minutes at 180°C..
Step 3
Meanwhile prepare the fenugreek and potato mixture as below..
Step 4
Heat the pan and sauté the onions, garlic and curry leaves together and mix well..
Step 5
Add the potatoes fallowed with water, cover with a lid and let it cook for few minutes..
Step 6
Season with salt and pepper to taste..
Step 7
Once the potatoes are cooked, add the fenugreek laves and mix well. Cook on a slow fire..
Step 8
Take the chicken from the oven and add to the potato and fenugreek mix..
Step 9
Add the Green chilies, tomato slices and some oyster and tomato sauce and mix well..
Step 10
Finish the dish with some LYMOL to Enhance the Flavor. .
