Ingredients
- 2 Eggplants
- Bread Crumbs
- Tomato
- Green Chili
- Onion
- 50g Wheat Flour
- Curry Leaves
- 2 teaspoons Lymol
- 100ml Oil
- Water
- 1 Egg
- Salt
- Pepper
Directions
Step 1

Slice the Eggplant | |
Step 2

Cut the tomatoes, green chilies, onions and put them into a blender with the curry leaves, egg and some water and blend into a smooth batter | |
Step 3

Pour the batter into a bowl and season with salt, pepper and Lymol | |
Step 4

Then coat the sliced eggplants in the batter | |
Step 5

Then coat them in bread crumbs | |
Step 6
|
Deep fry until golden brown | |
Step 7
|
Serve as a side dish or a snack with sauce | |
