Duck with Orange and Red Wine Sauce

Ingredients

  • 50ml Red Wine
  • Chopped Parsley
  • Chopped Onion
  • 1 teaspoon Chopped Garlic
  • 2 Oranges
  • 100ml Orange Juice
  • 50ml Duck Stock
  • 2 teaspoons Corn Flour
  • 1 Duck Breast
  • 1 Green Chili
  • 1 teaspoon Lymol
  • Salt
  • Pepper

Directions

Step 1
Prepare the marination by mixing chopped parsley, onion, red wine, salt and pepper and marinate the duck breast for 30 minutes
Step 2
Now grill the marinated duck breast for a few minutes on both sides, add the duck stock and cook for 15 minutes in slow fire
Step 3
In a another pan make the sauce by adding the orange juice, orange segments, garlic, green chili and allow to boil, thicken with corn flour
Step 4
Now add Lymol, salt and pepper to taste
Step 5
Slice the cooked duck breast and serve with the sauce and garnish with coriander leaves and parsley
