Chicken, Pineapple and Cashew Nut Curry

Ingredients

  • 100g Chicken
  • 100g Pineapple
  • 50g Cashew nuts
  • 2 cloves Garlic
  • 1 Onion (Sliced)
  • Curry Leaves
  • 2 teaspoons Coriander Powder
  • 2 teaspoons Chili Powder
  • Rampe
  • 1 teaspoon Tumaric Powder
  • 150ml Coconut Milk
  • 1 teaspoon Lymol
  • 1 teaspoon Oil
  • Salt
  • Pepper
  • Coriander Leaves

Directions

Step 1
Sauté the onions for a few minutes and add garlic, curry leaves and rampe
Step 2
Now add the chili, coriander and the turmeric powder and sauté for a few minutes
Step 3
Add chicken and some water, cook for 3 to 5 minutes
Step 4
Then mix in the pineapple and the coconut milk and cook for a few minutes
Step 5
Season with salt, pepper and Lymol
Step 6
Mix in the cashew nuts and serve with a garnish of coriander leaves
