A fish stew with a difference

Mediterranean Style Fish Stew

Ingredients

  • 200g Fish
  • 2 teaspoons Peprika
  • 1 teaspoon Saffron
  • 2 teaspoons Butter
  • Some Flour
  • handful Carrots
  • handful Leeks
  • handful Spring Onions
  • 100ml Fish Stock
  • 1 teaspoon Olive Oil
  • Chopped Garlic
  • 1/2 teaspoon Chopped Basil Leaves
  • 1 teaspoon Lymol
  • 1/2 teaspoon Thyme
  • Salt
  • Pepper

Directions

Step 1
Marinate the fish in Olive Oil, Salt, Lymol, Paprika, Pepper and Saffron
Step 2
In a pan melt the butter and add in the flour
Step 3
Now add the Garlic, Spring Onions and sauté for a while and add the fish stock
Step 4
Subsequently add in the carrots
Step 5
Then add in the marinated fish and cook till done
Step 6
Now add in the Leeks, basil leaves and the thyme and cook for few more minutes
Step 7
Serve hot as a side dish
