Dhal (Lentil) and Vegetable Salad

A great Salad to go with plain rice. ideal for vegetarians.

Ingredients:
100 g boiled Dhal (Lentil)
1 small carrot
1 green cucumber
1 onion chopped
1 small potato diced
1 tsp chili pieces
1 tsp fish sauce
1 coriander and dill leaves
1 ½ tsp Lymol
2 tsp olive oil
salt
pepper

Method:

  1. Boil the dhal and keep a side. Meanwhile cut the cucumber, carrots and potatoes in to dices.
  2. Boil the carrot and potatoes.
  3. Add dhal, potato and all other ingredients in to a bowl.
  4. Add chili, fish sauce, Lymol, olive oil into the same bowl and toss the salad.
  5. If necessary add salt and pepper to taste.
  6. Remember to add the fresh herbs (coriander and dill leaves) just before serving.
