Fried Eggplant Fritters

Ingredients

  • 2 Eggplants
  • Bread Crumbs
  • Tomato
  • Green Chili
  • Onion
  • 50g Wheat Flour
  • Curry Leaves
  • 2 teaspoons Lymol
  • 100ml Oil
  • Water
  • 1 Egg
  • Salt
  • Pepper

Directions

Step 1
Slice the Eggplant
Step 2
Cut the tomatoes, green chilies, onions and put them into a blender with the curry leaves, egg and some water and blend into a smooth batter
Step 3
Pour the batter into a bowl and season with salt, pepper and Lymol
Step 4
Then coat the sliced eggplants in the batter
Step 5
Then coat them in bread crumbs
Step 6
Deep fry until golden brown
Step 7
Serve as a side dish or a snack with sauce
