Chicken in Red Wine

Ingredients

  • 200g Boneless Chicken
  • 1 Onion
  • 1 clove Garlic
  • 1 stick Celery
  • 100ml Red Wine
  • 4 Button Mushrooms
  • 2 Asparagus
  • Few Olives
  • 2 teaspoons Lymol
  • 50ml Demi-glace
  • 2 Leaves Spinach
  • 1/2 teaspoon Thyme
  • 1/2 teaspoon Rosemary
  • 50ml Cream
  • Salt
  • Pepper

Directions

Step 1
Sauté the garlic, onions and celery for a few seconds
Step 2
Add the shredded chicken and sauté
Step 3
Now add the red wine to the sautéed chicken
Step 4
Next add the Lymol and allow to cook for a while
Step 5
Now add the demi-glace and cook in reduced heat and add in the rosemary and thyme
Step 6
Finally add cream and remove from the fire and add in the quartered mushrooms
Step 7
Mix in the spinach and add salt and pepper to taste
Step 8
Garnish with olives and asparagus and serve as a side dish
