Ingredients
- 100g Oyster Mushrooms
- 2 tablespoons Butter
- 25g Flour
- 1 Sliced Onion
- 1 Clove Sliced Garlic
- 2 Potatoes
- 1 teaspoon Lymol
- 200ml Vegitable or Chicken Stock
- Salt
- Pepper
- 5 teaspoons Fresh Cream
Directions
Step 1

Heat a pan, add butter and sauté the onions and garlic for a while | |
Step 2

Then add the potatoes and the mushrooms and sauté further | |
Step 3
|
Now add the flour and mix well | |
Step 4
|
Add the stock and bring it to boil and simmer till the vegetables are cooked | |
Step 5

In another pan, add some oil and sauté a few mushrooms and keep a side to use for garnish | |
Step 6

Remove the soup from the fire and leave it to cool and blend it | |
Step 7
|
Season with Lymol, salt and pepper | |

Serve the soup with spring onions, sautéed mushrooms and cream | |
